The trees are resting, and although it’s time for them to take a long nap, it’s time for us to put on our warm jackets and hats to give them a much needed prune. Although it might seem from the outside like the trees only come to life in the Spring, Summer and Autumn, they are the central part of the cider making process all year round.
It’s said that when you make cider and perry, you begin in the orchard. We agree.
